A number of origins of the name have been suggested. Roughan means "clarified butter" or "oil" or rendered animal fat in Persian and Urdu, while juš (alternatively romanised josh) means to "stew" or "braise" and ultimately derives from the verb jušidan meaning "to boil". Rogan josh, by this definition, may mean "stewed in ghee".
This is a medium curry, but for the heat lovers out there, you can easily add extra spice, while those who like a mild curry can leave out the chili. The ingredient list looks long, but everything is easy to find in the grocery store.
